Pressure Cooker Tortilla Soup

Spicy roasted pepper soup with creamy tomato base, served with tortilla chips and sour cream - ready in under an hour using a pressure cooker!
Ingredients:
  • 1 cup sour cream
  • 2 tablespoons vegetable oil
  • 2 large onions, chopped
  • 1 (12 ounce) jar roasted red peppers, drained and chopped
  • 1 (4 ounce) can roasted jalapeno peppers, diced
  • 1 clove garlic, minced
  • 1 tablespoon ground black pepper
  • salt to taste
  • 4 cups diced tomatoes
  • 1 (32 fluid ounce) container chicken stock
  • 1 cup heavy whipping cream
  • 1 cup chopped fresh cilantro
  • 1 (14.5 ounce) package tortilla chips
  • 1 (8 ounce) package shredded queso quesadilla (white Mexican cheese)
Instructions:
  • In a pressure cooker, warm vegetable oil over medium heat. Sauté onions until slightly softened, 5 to 8 minutes. Add red peppers, jalapeno peppers, garlic, black pepper, and salt; cook until garlic is fragrant and onions are softened, about 5 more minutes. Mix in tomatoes and heat through for about 1 minute.
  • Pour the tomato mixture into a blender and pulse a few times with the lid on before blending until smooth. Transfer the smooth tomato puree back to the pressure cooker.
  • Combine the chicken stock with tomato puree in a pot. Cook over high heat until it just starts to boil, around 5 minutes. Secure the pressure cooker lid, then cook on medium-low heat for 20 minutes after steam builds up. Let the pressure release naturally before removing the lid.
  • Bring the soup to a gentle boil, swirl in velvety cream and fresh cilantro. Take off the heat and allow it to cool for 5 minutes.
  • Crush tortilla chips into bowls and pour soup over them. Add a dollop of sour cream and a sprinkle of queso quesadilla on top.
