Effortless classic potato salad with eggs and potatoes cooked together for maximum convenience.
Ingredients:
  • 1 cup water
  • 2 pounds red potatoes, cut into 1-inch chunks
  • 0.33333334326744 cup mayonnaise
  • 2 teaspoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 celery stalk, diced
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 tablespoon chopped fresh chives
Instructions:
  • In a multi-functional pressure cooker like Instant Pot, add water and place the steamer basket inside. Add potatoes and eggs. Lock the lid and select high pressure for 4 minutes following the manufacturer's guidelines. Let pressure build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions for about 5 minutes. Then, unlock and remove the lid.
  • Combine peeled, hard-boiled egg whites in a bowl. In a separate bowl, mash yolks and mix with mayonnaise, vinegar, and mustard until smooth. Pour the dressing over the potatoes in the large bowl.
  • Mix together the chopped egg whites, potatoes, and celery. Add the dressing and toss until everything is well coated. Season with salt and pepper, then garnish with chives. Chill in the refrigerator before serving.
