Instant Pot Meatloaf and Potatoes

Whip up a comforting meatloaf and potato dish in your Instant Pot in just one hour for a delicious and easy meal.
Ingredients:
  • 1.5 pounds ground beef
  • 0.5 cup crushed cornflakes
  • 0.5 cup bread crumbs
  • 1 medium onion, diced
  • 2 large eggs
  • 1 tablespoon garlic powder
  • 1.5 teaspoons dried parsley
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 6 large potatoes, peeled and quartered
  • 1 cup chicken broth
Instructions:
  • Combine the ground beef, crushed cornflakes, bread crumbs, onion, eggs, garlic powder, parsley, salt, and pepper until thoroughly mixed. Form into a loaf shape.
  • Arrange potatoes in a single layer at the bottom of a multi-functional pressure cooker like an Instant Pot. Pour chicken broth over the potatoes and place the Instant Pot rack on top.
  • Place the meatloaf on a small tray that fits in the Instant Pot or create one from foil and set it on the rack. Lock the lid, select high pressure, and set the timer for 25 minutes following the manufacturer's instructions. Allow pressure to build for 10-15 minutes.
  • Carefully release pressure according to manufacturer's instructions using the quick-release method for about 5 minutes. Unlock and remove the lid.
