Instant Pot meatloaf with sweet ketchup-mustard sauce, broiled for a delicious, comforting family meal.
Ingredients:
  • 2 pounds ground beef
  • 1 cup dry bread crumbs
  • 0.5 cup diced onion
  • 0.5 apple - peeled, cored, and diced
  • 1 egg
  • 2 teaspoons garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.33333334326744 cup ketchup
  • 2 tablespoons prepared yellow mustard
  • 2 tablespoons brown sugar
Instructions:
  • Combine ground beef, bread crumbs, onion, apple, egg, garlic powder, salt, and pepper in a large bowl, ensuring all ingredients are thoroughly mixed.
  • Form the beef mixture into a loaf shape and then wrap it in aluminum foil, creating a loaf pan for baking.
  • Add 1/2 cup water to your Instant Pot, place the steam rack inside with handles up, and position the meatloaf on top. Lock the lid, seal the vent, select high pressure, and set the timer for 25 minutes following the manufacturer's instructions. Allow pressure to build for 10 to 15 minutes before enjoying.
  • Position the oven rack 6 inches below the heating element and preheat the broiler.
  • Release the cooker pressure gently following the quick-release method per the manufacturer's instructions for about 5 minutes. Remove the lid, transfer the meatloaf, still on the rack, to a baking sheet, and broil in the oven until browned, approximately 5 minutes.
  • Prepare the topping by mixing ketchup, mustard, and brown sugar in a small bowl.
  • Broil the meatloaf until nicely caramelized, for 1 to 2 minutes.
