These versatile Instant Pot Potatoes are ideal for potato salad, hearty breakfasts, and flavorful roasted dinners.
Ingredients:
  • 1 cup water
  • 2 pounds potatoes, cut into 1 1/2-inch chunks
Instructions:
  • Prepare the potatoes: Cut them into 1 ½-inch pieces. Fill the pressure cooker's inner pot with water. Place the potatoes in the steamer basket and lower it into the pot.
  • Pressure cook the potatoes: Seal the pressure cooker lid in the “sealing” position, set to “Pressure Cook” or “Manual” for 3 minutes on high pressure. Use quick release if available. Allow 10 minutes for the pot to pressurize.
  • After the cooking program is complete, release the pressure quickly by turning the pressure vent to "venting" or pressing the pressure release button based on your Instant Pot model.
  • Check doneness of potatoes: Once pressure has fully released, carefully open the pot and use heat-safe mitts to remove the steamer basket of potatoes. Potatoes are ready when fork-tender.
