Upgrade your roast with creamy, flavorful polenta instead of mashed potatoes.
Ingredients:
  • 637.50 gm chicken style liquid stock
  • 150.00 gm polenta
  • 126.25 gm pure cream
  • 250.00 ml finely grated parmesan
  • 75.00 gm basil pesto
Instructions:
  • In a saucepan, heat stock and 1 cup of cold water over high heat until boiling. Reduce heat to medium-low. Gradually add polenta while stirring continuously until well combined. Cook and stir for 8 to 10 minutes until the polenta is smooth and thick. Remove from heat.
  • Add the cream and Parmesan, then season with salt and pepper. Swirl in the pesto and serve.
