Creamy chicken pesto pasta - a one-pot family favorite winner for dinner!
Ingredients:
  • 56.88 gm extra virgin olive oil
  • 1 brown onion, finely chopped
  • 2 RSPCA Approved Chicken Breast Fillets
  • 2 garlic cloves, crushed
  • 255.00 gm chicken style liquid stock
  • 750.00 ml dried spiral pasta
  • 80g Pistachios
  • 250.00 ml fresh basil leaves, plus extra to serve
  • 187.50 ml fresh flat-leaf parsley leaves, plus extra to serve
  • 65.63 gm lemon juice, plus lemon zest to serve
  • 189.38 gm thickened cream
  • 1 small head broccoli, cut into small florets
  • 100g baby spinach
  • 375.00 ml perfect bakes grated cheese
Instructions:
  • In a large, deep ovenproof frying pan over medium-high heat, heat 1 tablespoon of oil. Sauté onion for 5 minutes until soft. Stir in chicken and cook for 3 minutes until it changes color. Introduce garlic and cook for 30 seconds. Pour in stock, 3/4 cup water, and pasta. Bring to a boil, then lower heat, cover, and simmer for 10 minutes until pasta is nearly cooked.
  • Combine pistachios, basil, and parsley in a small food processor. Pulse until finely chopped. Add the remaining 2 tablespoons of oil and lemon juice, then pulse until thoroughly combined.
  • Preheat the oven to 220C/200C fan-forced for optimal cooking conditions.
  • Mix in cream and pesto into the pasta, and season generously. Incorporate broccoli, spinach, and cheese into the mixture. Bake for 15 to 20 minutes until cheese is golden. Serve topped with extra basil, parsley, and lemon zest.
