One-pan creamy chicken pesto pasta recipe using store-bought ingredients like roasted chicken, sun-dried tomatoes, and pesto for a restaurant-quality meal. Versatile dish can be made vegetarian by doubling the pesto or omitting the cream. Perfect for both weeknight dinners and entertaining guests.
Ingredients:
  • 350g Cucina Matese Penne Rigate
  • 300ml light cream
  • 150.00 gm basil pesto
  • 3 green onions, sliced
  • 375.00 ml skinless shredded roast chicken (see related recipe)
  • 125.00 ml drained sun-dried tomatoes, thinly sliced
  • 82.50 ml finely grated parmesan cheese
  • Thinly sliced green onions, to serve
  • Crusty bread, to serve
Instructions:
  • Boil pasta in seasoned water according to package instructions until al dente. Save 1/4 cup pasta cooking water before draining.
  • Place the cooked pasta back in the pan over medium-low heat. Pour in the reserved liquid, cream, pesto, onion, chicken, and tomato. Mix everything together well. Stir and cook for 1 to 2 minutes until heated through.
  • Divide the mixture evenly among bowls. Sprinkle with freshly grated parmesan and finely sliced onions. Serve alongside warm slices of crusty bread.
