Creamy chicken pesto pasta recipe for two

Elevate your dinner game with our perfectly portioned one-pan chicken dish for two.
Ingredients:
  • 40.00 ml pine nuts
  • 9.20 gm extra virgin olive oil
  • 250g chicken tenderloins
  • 1 garlic cloves, chopped
  • 60ml (1/4 cup) white wine
  • 125g dried fettuccine (see note)
  • 500ml (2 cups) salt reduced chicken style liquid stock
  • 80ml (1/3 cup) thickened cream
  • 30.00 gm store-bought pesto, plus extra, to serve
  • Finely grated parmesan, to serve
  • Fresh basil leaves, to serve (optional)
Instructions:
  • Spread the pine nuts in a large frying pan and toast over high heat for about 3 minutes, shaking occasionally, until fragrant. Transfer to a bowl.
  • 1. Heat the oil in the pan until shimmering. 2. Sear the chicken for 3 minutes per side or until beautifully golden and fully cooked. 3. Transfer the chicken to a plate. 4. Add the garlic to the pan and sauté for 30 seconds until fragrant. 5. Pour in the wine and let it simmer while scraping up any browned bits with a wooden spoon, reducing for 2 minutes.
  • Combine the pasta and stock in a pan, cover, and simmer for 8 minutes until the pasta is almost cooked. Stir in the cream and pesto, then cook for an additional 2 minutes until the liquid is reduced, stirring occasionally with tongs.
  • Shred the chicken into big pieces. Combine with half of the pine nuts in the pan. Mix well. Sprinkle with Parmesan, the rest of the nuts, and basil if desired. Finish with a dollop of extra pesto on top.
