Irresistibly creamy chicken and pesto pasta with a risotto twist. Perfect for a quick and delicious weeknight dinner favorite.
Ingredients:
  • 305g (1 1/2 cups) risoni pasta
  • 200g green beans, trimmed, halved
  • 300ml pouring cream
  • 360g barbecued chicken or poached chicken, shredded
  • 150g tub store-bought basil pesto dip
Instructions:
  • In a large saucepan of salted boiling water, cook the risoni until al dente following packet directions, adding the beans for the last 2 minutes. Drain and return to the pan.
  • Stir in the cream and chicken into the risoni mixture. Cook over low heat for 2-3 minutes until warmed through. Season generously.
  • Spoon the mixture into individual bowls and add a dollop of pesto on top.
