One-pan creamy Dijon chicken with broccolini

Make a delicious one-pan chicken and broccolini dish with creamy mustard sauce, perfect for dipping crusty bread.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 600g chicken tenderloins
  • 2 bunches Perfection Fresh Broccolini, stems chopped
  • 3 garlic cloves, crushed
  • 20.00 ml thyme leaves
  • 125ml (1/2 cup) Chicken Liquid Stock
  • 165ml (2/3 cup) thickened cream, plus extra to drizzle
  • 23.40 gm Dijon mustard
  • Crusty bread, toasted, to serve
Instructions:
  • In a large, deep frying pan over medium-high heat, heat half of the oil. Cook chicken for 2 minutes on each side until golden. Season the chicken and transfer to a heatproof plate.
  • Put broccolini florets into a pan with ¼ cup water. Cook, stirring occasionally, for 2 minutes until vibrant green and water has evaporated. Move to a heatproof plate and cover to maintain warmth.
  • In the same pan, heat the remaining oil over medium heat. Add garlic and thyme, and cook, stirring, for 30 seconds until fragrant. Stir in stock, cream, and mustard, then bring to a simmer. Season the mixture, add broccolini stems, and return the chicken to the pan along with any resting juices. Cook for 2-3 minutes until the chicken is cooked through and the stems are just tender.
  • Arrange the broccolini florets over the chicken mixture and generously drizzle with additional cream. Serve alongside some crusty bread.
