Quick and easy chicken with creamy Dijon sauce cooked in one skillet for a hassle-free weeknight dinner.
Ingredients:
  • 1 to 1 1/4 pound boneless, skinless chicken breasts
  • Salt
  • 2 tablespoons extra virgin olive oil + more for lightly coating chicken
  • 1 tablespoon butter
  • 1 cup sliced shallots
  • 1/2 cup dry white wine (can sub chicken stock)
  • 1/2 cup water
  • 4 tablespoons Dijon mustard, smooth, whole grain, or a mixture of both
  • 1 teaspoon dried thyme
  • 1/4 cup heavy cream
Instructions:
  • Prepare and tenderize the chicken: Sprinkle salt over the chicken breasts and separate the tenderloin from each one. Cut each breast into 3 equal pieces. Drizzle a bit of olive oil over the pieces. Place them between two sheets of plastic wrap or parchment paper and flatten them to 1/4 inch thickness using a mallet, rolling pin, or empty wine bottle. Repeat the process for the tenderloin pieces.
  • In a large heavy-bottomed sauté pan over medium-high to high heat, warm olive oil and melt butter until foamy. Brown chicken cutlets on both sides, ensuring not to overcrowd the pan. Cook quickly to avoid overcooking. Set aside once lightly browned as you prepare the sauce.
  • Caramelize the shallots: Add sliced shallots to the pan over medium heat. Saute and stir occasionally in the flavorful pan juices until soft and golden brown, about 5 to 6 minutes.
  • Prepare the sauce by pouring in white wine and turning up the heat. Once the wine has mostly evaporated, incorporate water, mustard, and dried thyme. Let it simmer until it reduces by half.
  • Return chicken to pan; coat with sauce and drizzle in cream. Reduce heat to low, remove from heat, adjust seasonings as needed with salt.
