Creamy mustard chicken pairs perfectly with pasta or rice.
Ingredients:
  • 1.5 pounds boneless, skinless chicken breasts
  • Salt and pepper
  • 0.25 cup Mazola® Corn Oil
  • 2 cups thinly sliced leeks
  • 1 tablespoon minced fresh garlic
  • 1 cup reduced-sodium chicken broth
  • 0.5 cup half and half
  • 0.25 cup Dijon mustard
  • 1 tablespoon Argo® Corn Starch
  • 0.5 teaspoon Spice Islands® Thyme
  • Chopped parsley
Instructions:
  • Dry the chicken breasts thoroughly with paper towels and cut them into 2 to 3 pieces each. Season generously with salt and pepper. Heat 2 tablespoons of oil in a Dutch oven over medium-high heat. Add half of the chicken pieces to the Dutch oven and cook for 2 to 3 minutes on each side until beautifully browned.
  • Transfer the chicken to a platter and repeat with the remaining chicken. Add the remaining 2 tablespoons of oil to the pan. Sauté leeks and garlic over medium heat for 2 to 3 minutes until softened. Pour in chicken broth; bring to a boil, ensuring to scrape any browned bits from the bottom of the pan. Return the chicken to the Dutch oven, cover, and simmer for 10 minutes. Combine half and half with cornstarch and add to the Dutch oven along with Dijon mustard and thyme. Stir until the sauce thickens. Remove from heat and let it sit for 3 minutes. Transfer to a serving platter, sprinkle with chopped fresh parsley, and serve immediately with rice or noodles.
