Indulge in creamy Dijon chicken, featuring succulent chicken and tender onions in a decadent French mustard sauce for a gourmet dining experience.
Ingredients:
  • 1 large onion, sliced
  • 1 cup white wine
  • 1 pound skin-on, bone-in chicken thighs
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 0.33333334326744 cup Dijon mustard
  • 1 cup chicken broth
  • 0.33333334326744 cup heavy cream
  • 1 large bay leaf
  • 5 sprigs fresh thyme
Instructions:
  • Collect all your ingredients and preheat the oven to 350 degrees F (175 degrees C).
  • Season chicken thighs generously with salt and pepper. Heat oil and butter in a large oven-proof skillet over medium-high heat until sizzling. Place chicken thighs in the skillet, skin-side down, and sear until golden, about 3-4 minutes per side. Brush with 1 tablespoon mustard and cook for another 3-4 minutes until both sides are golden. Transfer chicken thighs to a plate.
  • Lower heat to medium. Add sliced onion and the remaining 1/4 cup of mustard to the skillet. Cook and stir often until onions are mostly translucent and coated in mustard, around 4 to 5 minutes. Pour in wine, scraping up any browned bits from the skillet using a wooden spoon. Increase heat to medium-high, bring to a boil, then let it simmer until the sauce slightly reduces and the alcohol smell dissipates, approximately 3 minutes.
  • Pour in the flavorful broth, rich heavy cream, fragrant bay leaf, and aromatic thyme; mix well. Carefully place the chicken back in the skillet, skin-side up, and cover with a lid.
  • Roast the chicken in the preheated oven until no longer pink at the bone and juices run clear, for approximately 15 to 20 minutes. Check doneness by using an instant-read thermometer near the bone; it should read 165 degrees F (74 degrees C).
