Dijon Chicken Smothered in Mushrooms

Transform plain chicken with savory Dijon and mushrooms - ready in under 30 minutes!
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 lb)
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons olive or canola oil
  • 1/2 cup roasted garlic-seasoned chicken broth (from 14-oz can)
  • 1 jar (4.5 oz) sliced mushrooms, drained
  • 1 1/2 tablespoons Dijon mustard
  • Chopped fresh thyme, if desired
Instructions:
  • Place each chicken breast between plastic wrap or waxed paper and gently pound with a meat mallet or rolling pin until 1/4 inch thick. In a shallow pan, mix flour, salt, and pepper.
  • In a large nonstick skillet, heat oil over medium-high heat. Dredge both sides of the chicken in the flour mixture. Cook the chicken in the hot oil for 6 to 8 minutes, flipping once, until cooked through. Transfer the chicken to a serving plate and cover to keep warm.
  • Pour broth into skillet and bring it to a boil over medium-high heat. Add mushrooms and mustard, then cook for 2 to 3 minutes, stirring frequently until slightly thickened. Serve by spooning the sauce over chicken and finish with a sprinkle of thyme.
