Tangy mustard enhances juicy chicken over quick orzo.
Ingredients:
  • 4 boneless, skinless chicken breast halves (about 1 1/4 lb)
  • 1/4 cup Dijon mustard
  • 1 tablespoon olive or vegetable oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried rosemary leaves, crumbled
  • 1/4 teaspoon pepper
  • 1 1/3 cups uncooked orzo pasta (8 oz)
Instructions:
  • Preheat oven to 375°F and generously coat an 11x7-inch glass baking dish with cooking spray before arranging the chicken in the dish.
  • Mix all the remaining ingredients, except the pasta and parsley, in a small bowl. Spread the mustard mixture evenly over the chicken to coat it completely.
  • Bake for 25-30 minutes until the chicken juices run clear when the thickest pieces are sliced.
  • Cook the pasta according to package instructions, then drain it. Garnish the chicken with parsley and serve with the pasta.
