Dijon Chicken, Rice and Garden Vegetable Foil Packs

Flavorful garlic and Dijon mustard chicken with rice and veggies grilled or baked in foil packs for a delicious and low-mess meal.
Ingredients:
  • 2 cups Progresso™ chicken broth (from 32-oz carton)
  • 2 cups uncooked instant white rice
  • 1 teaspoon finely chopped fresh rosemary leaves
  • 2 tablespoons Dijon mustard
  • 3 tablespoons olive oil
  • 2 cloves garlic, finely chopped
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 small zucchini, cut into 1/2-inch slices
  • 3 medium carrots, cut into 1/4-inch slices
  • 4 boneless skinless chicken breasts
Instructions:
  • Preheat gas or charcoal grill. Cut 4 sheets of heavy-duty foil measuring 18x12 inches each and coat with cooking spray.
  • In a 4-cup glass measuring cup, combine broth, rice, and rosemary. Stir gently and allow to sit for approximately 8 minutes, or until most of the liquid is absorbed.
  • Combine mustard, 2 tablespoons olive oil, garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a small bowl. Set aside.
  • Combine zucchini, carrots, remaining 1 tablespoon oil, and remaining 1/4 teaspoon each of salt and pepper in a large bowl.
  • Separate the rice mixture evenly onto the foil sheets. Coat both sides of the chicken with the Dijon mixture and place one piece on top of each portion of rice. Distribute the vegetables over the foil sheets, arranging them beside the chicken breasts.
  • Place chicken and vegetables in the center of the foil. Fold the edges over to meet, making a tight 1/2-inch fold; then fold again to allow room for heat circulation. Seal the other sides to enclose the packet.
  • Grill the packets over medium heat with the grill covered for 18-20 minutes. Rotate the packets halfway through cooking. Ensure the chicken is fully cooked by checking that the juices run clear and the temperature reaches 165°F at the thickest part.
  • Arrange the packets on serving plates. Use a sharp knife to cut a large X across the top of each packet, then gently fold back the foil.
