Juicy chicken thighs slathered in a creamy Dijon mustard mixture, topped with Parmesan and breadcrumbs, then baked to perfection - a flavorful and simple entrée.
Ingredients:
  • 4 (4 ounce) boneless, skinless chicken thighs
  • 0.5 teaspoon light adobo seasoning
  • ground black pepper to taste
  • 1 cup Dijon mustard
  • 0.25 cup salted butter, melted
  • 1 cup dry bread crumbs, or as needed
  • 0.25 cup grated Parmesan cheese
  • nonstick cooking spray
  • 1 teaspoon minced fresh parsley, or to taste
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), and set up a rack on a rimmed baking sheet.
  • Prepare the chicken thighs by removing any excess fat and generously seasoning with a light coating of adobo and pepper.
  • Mix Dijon mustard and melted butter in a shallow bowl until smooth and shiny. In a separate bowl, blend bread crumbs with Parmesan cheese.
  • Coat chicken thighs generously in the Dijon mixture, then cover with the bread crumb mixture. Place on a baking sheet and spritz the tops with cooking spray before baking.
  • Roast in the preheated oven without turning until fully cooked, about 30-35 minutes. Check for doneness by using an instant-read thermometer, ensuring it reads at least 165 degrees F (74 degrees C) when inserted into the center.
  • Sprinkle with fresh parsley for a beautiful finishing touch.
