Creamy Dijon chicken and mushrooms: Simple, yet elegant dinner for a busy weeknight.
Ingredients:
  • 0.5 cup milk
  • 0.33333334326744 cup all-purpose flour
  • 4 skinless, boneless chicken breast halves, pounded to an even thickness
  • 3 tablespoons vegetable oil
  • 1 tablespoon butter
  • 2 cups thinly sliced mushrooms
  • 2 tablespoons dry white wine
  • 1.5 cups prepared chicken gravy
  • 1 cup half-and-half
  • 1.5 tablespoons Dijon mustard
Instructions:
  • Assemble all ingredients.
  • First, pour milk into a wide, shallow bowl. Next, spread flour in another wide, shallow bowl. Dip each chicken breast half into the milk to coat it, then move it to the flour bowl and press the chicken into the flour to coat it completely.
  • In a skillet set over medium-high heat, heat oil until shimmering. Fry chicken until beautifully golden, about 3 minutes per side. Transfer chicken to a plate; discard excess fat from the skillet and return to medium-high heat.
  • Heat butter in the skillet until melted. Sauté mushrooms in the hot butter until softened, approximately 2 minutes.
  • Add white wine to the mushrooms and combine with gravy, half-and-half, and mustard. Season with salt and pepper, then simmer for 2 minutes.
  • Place the chicken back in the skillet and cook for approximately 5 minutes until the chicken is fully cooked, with clear juices and no pink in the center. Verify doneness by checking with an instant-read thermometer, aiming for a minimum temperature of 165 degrees F (74 degrees C).
