One-pan creamy garlic prawn risoni recipe

Quick and flavorful seafood dish with white wine and mustard.
Ingredients:
  • 50g garlic butter
  • 36.40 gm olive oil
  • 500g peeled green prawns, tails intact
  • 11.80 gm Dijon mustard
  • 200g (1 cup) risoni pasta
  • 375ml (1 1/2 cups) Chicken Style Liquid Stock
  • 125ml (1/2 cup) white wine
  • 300ml Light Thickened Cooking Cream
  • 20.00 ml chopped parsley leaves
Instructions:
  • In a large frying pan over medium-high heat, combine 20g of garlic butter and 1 tablespoon of oil. Saute the prawns in two batches for 2-3 minutes until they turn golden and are cooked through. Remove from the pan and set aside on a plate.
  • Lower the heat to medium and pour the rest of the oil into the pan. Sauté the leek for 2 minutes until it turns soft. Incorporate the mustard, pasta, stock, wine, and cream. Mix everything well. Let it come to a boil, then simmer for 10 minutes, stirring occasionally, until the pasta is cooked to perfection.
  • Preheat the grill to medium heat. Spread the prawns over the pasta and evenly dot with the remaining butter. Grill for 2 minutes or until the butter has melted. Sprinkle with parsley and serve immediately with lemon wedges.
