One-pan creamy Tuscan salmon recipe

Try this flavorful one-pan salmon with creamy sun-dried tomato sauce for a delicious and quick dinner option.
Ingredients:
  • 110g (1/2 cup) semi-dried tomatoes in oil, chopped
  • 27.60 gm oil reserved from semi-dried tomatoes in oil
  • 4 x 130g skinless salmon fillets
  • 1 brown onion, finely chopped
  • 300ml Cooking Cream
  • 80g baby spinach
  • 20.00 ml drained baby capers
  • 62.50 ml small fresh basil leaves
  • Crusty bread, to serve
Instructions:
  • Heat half of the reserved oil in a large frying pan over medium-high heat. Sear the salmon for 1 minute on each side until beautifully golden. Place on a plate to rest.
  • In the same pan, heat the remaining reserved oil over medium-high heat. Sauté the onion and garlic until softened, about 5 minutes. Pour in the cream and 80ml (1/3 cup) water, then bring to a boil. Add the salmon and sun-dried tomato, then simmer on low heat for about 3 minutes until the salmon is nearly cooked through.
  • Mix in the spinach and capers until wilted, around 1-2 minutes. Top with fresh basil and serve alongside crusty bread.
