One-Pan Creamy Chicken and Bacon Zucchini Noodles

Indulge in creamy skillet chicken with bacon and zucchini noodles, swap for pasta if desired.
Ingredients:
  • 1 teaspoon Italian herb seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 pounds chicken breast tenders
  • 6 slices bacon
  • 2 tablespoons minced fresh garlic
  • 1/2 teaspoon red pepper flakes
  • 4 cups peeled chopped fresh tomatoes, drained
  • 1 1/2 cups heavy cream
  • 1 cup shredded Parmesan cheese, divided
  • 3 cups baby spinach leaves
  • 4 cups cooked and drained zucchini noodles
  • Salt and freshly ground black pepper to taste
Instructions:
  • Combine Italian seasoning, paprika, salt, and black pepper in a large bowl and whisk together. Pat chicken dry with paper towels, then coat evenly with the seasoning mixture.
  • Cook the bacon in a large skillet over medium heat until crispy and golden brown, approximately 5 minutes. Remove most of the bacon fat, leaving about 2 tablespoons in the skillet. Chop the bacon and set it aside.
  • Sear chicken in sizzling bacon fat in a hot skillet over medium heat until golden brown, approximately 3 minutes on each side. Transfer chicken to a plate and cover to keep warm.
  • Add minced garlic and red pepper flakes to the skillet and sauté until fragrant, around 30 seconds. Introduce the tomatoes and cook for 3 minutes. Pour in the cream and bring to a boil. Stir in ½ cup of shredded Parmesan cheese and continue cooking until the cheese is melted and the sauce is smooth, around 3 minutes.
  • Sauté fresh spinach until wilted, for about 1 to 2 minutes. Reintroduce the cooked chicken along with its juices to the pan. Mix in chopped bacon and zucchini noodles. Simmer until the chicken is warm, around 3 to 4 minutes. Season with salt and pepper. Finish with a generous sprinkle of Parmesan cheese before serving.
