Steam broccolini and potatoes simultaneously in the Instant Pot for a quick and easy salad.
Ingredients:
  • 4 medium Yukon Gold potatoes, cut into 16 pieces
  • 1 bunch broccolini, stems trimmed
  • 0.25 cup extra-virgin olive oil
  • 3 tablespoons fresh-squeezed lemon juice
  • 1 tablespoon minced garlic
  • 1 teaspoon minced fresh oregano
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground black pepper
Instructions:
  • In a multi-functional pressure cooker, set up a steamer basket. Add potatoes to the basket and top with broccolini. Pour 1 1/2 cups water over the veggies. Lock the lid, select high pressure, and set timer for 3 minutes. Let pressure build for 5 to 10 minutes.
  • Carefully release pressure using the quick-release method as per manufacturer's instructions for about 5 minutes. Unlock and remove the lid, then transfer the broccolini and potatoes to a serving bowl to cool.
  • In a small bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper, whisking until well blended. Drizzle the dressing over the broccolini and potatoes. Enjoy right away or chill in the fridge, remembering to take it out 1 hour before serving.
