Delicious Instant Pot broccoli and cheese rice with crispy golden topping.
Ingredients:
  • 1 tablespoon butter
  • 0.25 cup chopped onion
  • 1.5 cups chicken broth, divided
  • 1 cup uncooked white rice
  • 1 head broccoli, chopped
  • 0.5 cup fat-free half-and-half
  • 1 teaspoon garlic salt
  • 0.5 teaspoon Italian seasoning
  • 0.25 teaspoon black pepper
  • 1 cup shredded Cheddar cheese, divided
Instructions:
  • Heat the multi-functional pressure cooker using the Sauté function. Melt the butter and sauté the onion until golden brown. Pour in 1 1/4 cups of chicken broth and rice, ensuring the liquid covers the rice. Lock the lid, select the Rice setting for 12 minutes, and let the pressure build for 10 to 15 minutes before serving.
  • Carefully release pressure following manufacturer's instructions for quick release in about 5 minutes. Unlock and remove the lid. Stir in chopped broccoli and add the remaining 1/4 cup of chicken broth if rice appears dry. Close and seal the lid, then choose the Steam setting and set the timer for 5 minutes.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions for 5 minutes. Open the lid, then stir in half-and-half, garlic salt, Italian seasoning, and pepper. Mix in 3/4 cup of Cheddar cheese until well combined.
  • Position the oven rack 6 inches below the heat source and preheat the broiler. Grease an 8-inch square casserole dish.
  • Spread the broccoli mixture into the casserole dish and sprinkle the top with the remaining 1/4 cup of Cheddar cheese. Place under the broiler until the cheese is golden brown, for about 5 minutes.
