Indulgent Instant Pot cheesy grits with creamy cream cheese, sharp Cheddar, and a hint of truffle salt, ready in just 25 minutes.
Ingredients:
  • 2.25 cups chicken broth, divided
  • 0.5 cup grits
  • 0.5 cup shredded Cheddar cheese
  • 2 ounces cream cheese
  • 1 teaspoon butter
  • 0.5 teaspoon truffle salt
Instructions:
  • In a multi-functional pressure cooker (like an Instant Pot), mix together 1 3/4 cups chicken broth and grits. Seal the lid shut. Choose the Porridge setting and high pressure as per the manufacturer's guidelines; set the timer for 5 minutes. Let the pressure build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method as per manufacturer's instructions for about 5 minutes. Unlock and remove the lid, then stir in the remaining chicken broth. Finally, mix in the Cheddar cheese, cream cheese, butter, and truffle salt.
