Instant Pot broccoli and cheese soup: creamy, decadent, and comforting for chilly days.
Ingredients:
  • 2 tablespoons salted butter
  • 1 small onion, diced
  • 1 head broccoli, chopped
  • 3 cups chicken broth
  • 1 cup heavy whipping cream
  • 6 ounces grated sharp Cheddar cheese
  • 0.25 cup crema con sal (salted Mexican-style sour cream)
  • 1 teaspoon garlic granules
  • salt and ground black pepper to taste
Instructions:
  • Preheat a multi-functional pressure cooker (such as Instant Pot) using the Sauté function. Sauté onion in butter until fragrant, around 5 minutes. Stir in broccoli, chicken broth, and whipping cream.
  • Secure the lid, choosing high pressure per the manufacturer's guidelines. Set the timer for 5 minutes and patiently wait 10 to 15 minutes for the pressure to build.
  • Follow the natural-release method for 5 minutes as per the manufacturer's instructions, then switch to the quick-release method for about 5 minutes. Remove the lid and unlock.
  • Mix in sharp Cheddar cheese, Mexican crema with salt, and garlic granules. Season generously with salt and pepper. Serve hot right away.
