Upgrade your Easter with Instant Pot cheesy au gratin potatoes that will make you forget about boxed potatoes.
Ingredients:
  • 2 pounds russet potatoes, peeled
  • 1 cup chicken broth
  • 0.25 cup diced onion
  • 1 tablespoon parsley flakes
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon pepper
  • 0.5 cup evaporated milk
  • 1 cup shredded Cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
Instructions:
  • Thinly slice the potatoes to 1/4-inch thickness with a mandolin, then rinse them under cold water to remove any excess starch.
  • Preheat a multi-functional pressure cooker, like an Instant Pot. Combine potatoes, chicken broth, onion, parsley, garlic powder, paprika, salt, and pepper in the pot. Seal the lid and set to high pressure for 1 minute following the manufacturer's guidelines. Let the pressure build for 10 minutes.
  • Release pressure using the quick-release method following the manufacturer's instructions for about 5 minutes. Then, unlock and remove the lid.
  • Combine evaporated milk, gooey Cheddar cheese, and flavorful Monterey Jack cheese in the pot. Gently stir until the cheese is beautifully melted. Then, transfer the creamy potatoes to an oven-safe baking dish.
  • Position oven rack 6 inches from heat source and preheat broiler on low. Broil for 4 minutes until top is golden and bubbling. Take potatoes out of the oven and allow to rest for 10 minutes to thicken.
