Easy one-pot vegan lentil soup made in an Instant Pot. Delicious, comforting, and nutrient-packed.
Ingredients:
  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1.5 cups red lentils
  • 1 (28 ounce) can diced tomatoes
  • 4 cups vegetable broth
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 0.75 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley
Instructions:
  • Preheat your Instant Pot using the Saute function. Saute onions in olive oil until translucent, about 5 minutes. Add in carrots and celery; cook until tender, about 3 minutes. Stir in lentils, diced tomatoes, vegetable broth, garlic, thyme, salt, paprika, and black pepper. Seal the lid, set to high pressure, and cook for 15 minutes following manufacturer's guidelines. Let pressure release naturally for 10-15 minutes.
  • Allow the pressure to naturally release for 10 to 40 minutes following the manufacturer's instructions. Serve in bowls and garnish with parsley.
