Savor a flavorful twist on Cajun gumbo with sausage, shrimp, and rice, ideal for cozy evenings.
Ingredients:
  • 1 cup canola oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 stalks celery, diced
  • 1 pound andouille sausage, chopped
  • 2 tablespoons Cajun seasoning
  • 2 cloves garlic, chopped
  • 6 cups low-sodium chicken stock
  • 1 pound peeled and deveined small shrimp
Instructions:
  • In a skillet, heat oil and flour over medium heat, stirring constantly, until the mixture thickens and turns the color of peanut butter, approximately 20 minutes.
  • Sauté onion, green bell pepper, and celery in the flour mixture until softened. Then, mix in the sausage and cook until browned. Finally, add Cajun seasoning, garlic, and black pepper, cooking until fragrant.
  • Pour rich and savory chicken stock over the aromatic vegetable and flavorful sausage mix. Let it gently simmer on low heat for 30 minutes. Introduce plump shrimp and cook until they turn a delightful pink color and are perfectly cooked, roughly 10 minutes.
