Easy Instant Pot Jambalaya with andouille sausage, shrimp, chicken, and veggies. Flavorful and quick!
Ingredients:
  • 1 cup uncooked white rice
  • 1 cup chicken broth
  • 1 tablespoon grapeseed oil
  • 2 chicken breasts, chopped in small pieces
  • 2 andouille sausages, sliced
  • 2 ribs celery, chopped
  • 1 small green bell pepper, seeded and chopped
  • 1 small onion, chopped
  • 1 (14.5 ounce) can fire-roasted tomatoes
  • 2 teaspoons Creole seasoning
  • 1 teaspoon Cajun seasoning
  • 12 large shrimp, peeled and deveined
Instructions:
  • Wash the rice, then place it in the Instant Pot® with chicken broth. Secure the lid, set to sealing, and select the Rice function. Let the pressure build for 10 to 15 minutes.
  • Using caution, carefully release pressure using quick-release method following manufacturer's guidelines for approximately 5 minutes. Remove the lid and transfer the rice to a bowl to keep warm.
  • Begin by preparing the pot by rinsing it out, then select the Saute function. Proceed by adding grapeseed oil, chicken, and sausage, and saute them until browned, which will take around 5 to 7 minutes. Next, introduce celery, bell pepper, and onion, and saute for an additional minute. Follow this by incorporating tomatoes, Creole seasoning, and Cajun seasoning. Finally, add the shrimp and cook until their tails curl up, which should take 1 to 3 minutes. Serve the flavorful jambalaya over or mixed with the cooked rice.
