Cajun-style cassoulet with a flavorful twist using the 'holy trinity.' Customize spice to taste.
Ingredients:
  • 3 tablespoons butter, divided
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 0.5 pound thick-cut bacon, cut into 1-inch chunks
  • 2 (4 ounce) chicken breasts, cut into 1-inch pieces
  • 1 pound boudin sausage
  • 2 (15.5 ounce) cans cannellini beans, drained and rinsed
  • 3 cups low-sodium chicken stock
  • 3 large cloves garlic, minced
  • 2 cups fresh white bread crumbs
  • 1 tablespoon Cajun seasoning
  • 2 teaspoons hot pepper sauce
Instructions:
  • Preheat Instant Pot® on Saute mode. Melt half the butter and saute onion, bell pepper, and celery until soft for about 5 minutes. Transfer cooked vegetables to a bowl. Crisp bacon for about 5 minutes, then set aside on a paper towel-lined plate. Cook chicken and boudin sausage in the bacon fat until chicken is no longer pink and the juices run clear, 5 to 10 minutes. Discard bacon grease and switch off Saute mode.
  • Add cannellini beans, chicken broth, and cooked onion mixture into the pot. Seal the lid securely. Choose high pressure based on your device's guidelines; set the timer for 10 minutes. Let the pressure naturally build for 10 to 15 minutes.
  • Melt the rest of the butter in a small skillet over medium heat. Add minced garlic and fresh bread crumbs. Cook until golden brown, for about 2 to 4 minutes. Transfer the garlic and bread crumbs to a bowl.
  • Safely release Instant Pot® pressure using quick-release method per manufacturer's instructions for about 5 minutes. Unlock and lift the lid. Take out boudin sausage, slice into 1-inch pieces, and put back into the pot. Mix in Cajun seasoning, hot sauce, and cooked bacon. Serve cassoulet into bowls and sprinkle toasted bread crumbs on each serving.
