Create a zesty twist on pad Thai with shrimp, smoked sausage, cilantro, and a splash of lime.
Ingredients:
  • 1 (14-ounce) package stir-fry rice noodles
  • 1 (14 ounce) package Hillshire Farm® Smoked Sausage, cut crosswise into 1/2-inch-thick slices
  • 2 tablespoons vegetable oil
  • 0.5 pound peeled and deveined small shrimp
  • 6 green onions, chopped into 1-inch pieces
  • 2 cloves garlic, finely chopped
  • 3 tablespoons soy sauce
  • 3 tablespoons fresh lime juice
  • 3 tablespoons brown sugar
  • 2 teaspoons fish sauce
  • 0.25 cup chopped fresh cilantro leaves
  • 0.5 cup chopped roasted salted peanuts
Instructions:
  • Prepare the noodles per package instructions. Remember to rinse them thoroughly with cold water to prevent them from sticking, then set them aside.
  • Preheat a large skillet over medium heat. Arrange the smoked sausage in a single layer and cook on both sides until golden brown, about 6 minutes in total. Transfer to a plate.
  • In a skillet, heat vegetable oil and cook shrimp, green onions, and garlic for 3 to 4 minutes until shrimp is opaque.
  • In a small bowl, gently combine the soy sauce, lime juice, brown sugar, fish sauce, and 2 tablespoons water until well mixed.
  • Combine noodles and smoked sausage in the skillet before adding the soy mixture. Stir thoroughly and increase heat to medium-high. Cook for 2 to 3 minutes until noodles are hot. Then, add 1/2 of the cilantro and peanuts. Serve the pad Thai in bowls and garnish with the remaining cilantro and peanuts.
