Easy satay noodles

Quick and savory Pad Thai noodles with veggie and peanut sauce.
Ingredients:
  • 31.20 gm reduced-fat crunchy peanut butter
  • 22.00 gm sweet chilli sauce
  • 21.00 gm salt-reduced soy sauce
  • 100g dried rice stick (pad Thai) noodles
  • 9.20 gm peanut oil
  • 1 egg, lightly beaten
  • 1/2 small red onion, cut into thin wedges
  • 1 small carrot, cut into matchsticks
  • 50g snow peas, trimmed, sliced
  • fresh coriander leaves, to serve
Instructions:
  • In a bowl, mix together peanut butter, sweet chili sauce, soy sauce, and 1 tablespoon of cold water. Place noodles in a heatproof bowl and cover with boiling water. Let stand for 4 to 5 minutes until tender. Use a fork to separate the noodles and then drain them.
  • Heat wok over high heat with half of the oil. Swirl to coat. Add egg and swirl to cover base thinly. Cook for 1 minute or until just set. Transfer to board, roll up, and thinly slice.
  • In the wok, sauté onion in the remaining oil until softened for 2 to 3 minutes. Then, add carrot and snow peas, cooking until just tender for 1 minute. Mix in noodles and peanut butter mixture, heating through for 1 to 2 minutes. Finally, stir in the egg and garnish with fresh coriander leaves before serving.
