Savory stir-fry drizzled with decadent peanut sauce.
Ingredients:
  • 2 packets instant noodles
  • 3 tsp sesame oil
  • 1/2 red capsicum, seeded and sliced
  • 1 medium carrot, diagonally sliced
  • 1 bunch roughly chopped pak choy (often sold as baby buk choy)
  • 21.00 gm soy sauce
  • 176.55 gm store bought satay sauce
Instructions:
  • Cook the instant noodles in boiling water without adding the flavor packet as per package instructions, then drain them.
  • Heat aromatic sesame oil in a sizzling wok or large frying pan over medium-high heat. Add vibrant capsicum and crisp carrot, stir and cook for 2-3 minutes.
  • Combine pak choy and cook for an additional 2 minutes. Then, mix in soy sauce and the cooked noodles, tossing until well combined.
  • Transfer to a large bowl and cover to keep warm. Return the wok to the heat, then add satay sauce and cook, stirring, for 30 seconds until heated through.
  • Portion out the vegetables and noodles into individual serving bowls and generously ladle the satay sauce over them or serve the sauce on the side.
