Satay beef with noodles

Homemade slippery satay noodles - quick and fresh!
Ingredients:
  • 500g beef stir-fry strips
  • 450g packet hokkien noodles
  • 1 red onion, cut lengthways into thin wedges
  • 1 red capsicum, cut into thin strips
  • 1 small head broccoli, cut into florets
  • 250g sachet satay marinade
  • 3 tsp peanuts, chopped
  • Lime, cut into wedges
Instructions:
  • In a wok, heat some oil over high heat. Stir-fry half of the beef for 2-3 mins until browned and cooked through. Transfer to a plate and repeat with the remaining beef.
  • Place noodles in a heat-proof bowl and pour boiling water over them. Let soak for 5 mins, gently loosening the noodles with a chopstick or fork. Drain thoroughly.
  • Heat the rest of the oil in a wok, then stir in the onion. Cook over medium-high heat for 2 minutes. Add capsicum and broccoli, stir-fry for an additional 4 minutes until tender-crisp.
  • Add the beef back to the wok with the marinade. Mix well and heat. Serve over noodles, garnish with peanuts, and lime wedges on the side.
