Sure to please all ages with this delicious twist on a weekday dinner.
Ingredients:
  • 1/2 x 250g packet dried long-life noodles
  • 18.40 gm canola oil
  • 450g beef stir-fry strips
  • 1 small red onion, cut into thin wedges
  • 1 red capsicum, thinly sliced
  • 1 carrot, peeled, cut into matchsticks
  • 125.00 ml beansprouts, trimmed
  • 3 green onions, cut into 4cm lengths
  • 82.50 ml unsalted roasted peanuts, chopped
  • 375.00 ml shredded iceberg lettuce
  • 65.00 gm reduced-fat crunchy peanut butter
  • 83.33 gm reduced-fat coconut milk
  • 44.00 gm sweet chilli sauce
Instructions:
  • Prepare the satay sauce by blending peanut butter, coconut milk, sweet chili sauce, and 2 tablespoons of cold water together in a bowl.
  • In a heatproof bowl, soak noodles in boiling water for 5 minutes until tender. Use a fork to separate noodles, then drain and rinse under cold water.
  • Preheat a wok over high heat, then add half of the oil and swirl to coat. Add the beef and stir-fry for 4 to 5 minutes until browned. Remove the beef and transfer to a bowl.
  • Drizzle the remaining oil into the wok, swirling it to coat the pan evenly. Toss in the red onion, capsicum, and carrot, stir-frying for 5 to 7 minutes until the veggies are tender. Add back the beef, along with any juices, then mix in the noodles and satay sauce. Stir-fry everything for 2 to 3 minutes until heated through. Finish by adding the beansprouts, green onion, peanuts, and lettuce, tossing to combine. Serve and enjoy!
