Beef, pickled cucumber and soba noodle salad

Delicious beef noodle salad with flavorful satay sauce.
Ingredients:
  • 50.00 ml rice wine vinegar
  • 12.50 gm caster sugar
  • 2 Lebanese cucumbers, deseeded, finely chopped
  • 1 long fresh red chilli, deseeded, finely chopped
  • 270g pkt dried soba noodles
  • 31.20 gm smooth peanut butter
  • 27.30 gm peanut oil
  • 21.00 gm light soy sauce
  • 2 tsp fresh ginger, finely grated
  • 10.00 gm water, cold
  • 2 (about 450g) beef porterhouse steaks
  • 125.00 ml fresh coriander leaves
  • 2 green shallots, thinly sliced
Instructions:
  • Combine 1 1/2 tablespoons of vinegar and 1 1/2 teaspoons of sugar in a bowl, then season. Mix in the cucumber and chili, stirring well. Let it sit to enhance the flavors.
  • Boil the noodles in a large saucepan according to package instructions. Drain and rinse with cold water before transferring to a large bowl.
  • Combine the peanut butter, oil, soy sauce, ginger, cold water, and the rest of the vinegar and sugar in a bowl and whisk until smooth. Let it sit for later.
  • Preheat a chargrill or barbecue grill to medium-high heat. Coat steaks with oil and season generously. Grill, flipping once, for 3-4 minutes for medium doneness or until cooked to your preference. Let them rest for 3 minutes before thinly slicing the steak.
  • Combine the steak, coriander, and shallot with the noodles. Pour in half of the dressing and half of the cucumber mixture. Mix everything together until well combined. Serve on plates and garnish with the remaining dressing and cucumber mixture.
