Korean-inspired Sloppy Joes: Savory ground beef cooked in sweet soy sauce, garlic, and brown sugar, served on sesame buns with zesty quick-pickled cucumber and red onion.
Ingredients:
  • 0.5 cup rice vinegar
  • 0.5 cup water
  • 2 tablespoons raw cane sugar
  • 1 teaspoon sriracha sauce
  • 1 small cucumber, thinly sliced
  • 0.5 small red onion, sliced into petals
  • 1 pound lean ground beef
  • 0.66666668653488 cup reduced-sodium soy sauce
  • 0.5 cup brown sugar
  • 3 green onions, chopped
  • 2 teaspoons sesame oil
  • 1 tablespoon sriracha sauce
  • 1 teaspoon garlic puree
  • 1 teaspoon ginger paste
  • 6 sesame seed burger buns
Instructions:
  • Combine rice vinegar, water, sugar, and sriracha in a small saucepan and bring to a boil over medium heat. Cook for about 2 minutes until the sugar has dissolved. Pour the vinegar mixture over cucumber and red onion in a dish and let it pickle while you work on the bulgogi.
  • Preheat a large skillet over medium-high heat. Brown ground beef for 5 minutes. Drain grease and return beef to skillet. Stir in soy sauce, brown sugar, green onions, sesame oil, sriracha, garlic, and ginger. Simmer until sauce thickens, about 8 minutes.
  • Assemble bulgogi mixture on burger buns, garnish with pickled cucumbers and onions.
