Sloppy Joe: Savory ground meat with tomato, onion, & seasonings, served in a burger bun.
Ingredients:
  • 1/2 small brown onion, finely chopped
  • 250g lean beef mince
  • 100g zucchini
  • 1/2 small red capsicum, finely chopped
  • 1/2 tsp mustard powder
  • 16.00 gm brown sugar
  • 40.00 ml cider vinegar
  • 6.10 gm worcestershire sauce
  • Pinch of chilli powder (optional)
  • 410g can tomato puree
  • 8 mini brioche burger buns with sesame seeds, split, toasted (see Notes)
  • Carrot, cut into sticks, to serve
  • Celery, cut into sticks, to serve
Instructions:
  • In a large frying pan over medium-high heat, heat oil until shimmering. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add mince, breaking it up with a wooden spoon, and cook until browned, about 5 minutes. Finally, add zucchini and capsicum, cooking until tender, around 2 minutes. Enjoy!
  • Combine mustard powder, sugar, vinegar, Worcestershire sauce, and chili in the pot. Stir in tomato puree. Bring to a boil, then reduce heat and simmer for 12 to 15 minutes until thickened.
  • Dollop 2 tablespoons of mince mixture onto each bun base. Top with bun tops and enjoy with carrot and celery sticks.
