Satay noodles and meatballs

Try this flavorful Asian satay noodle and meatball recipe for a delicious meal.
Ingredients:
  • 4 green onions
  • 500g pork mince
  • 187.50 ml fresh breadcrumbs
  • 36.40 gm peanut oil
  • 1 small red capsicum, finely chopped
  • 1 garlic clove, crushed
  • 65.00 gm crunchy peanut butter
  • 270ml can coconut milk
  • 44.00 gm sweet chilli sauce
  • 20.00 ml kecap manis
  • 12.20 gm fish sauce
  • 21.00 gm lime juice
  • 450g packet fresh thin hokkien noodles
  • Baby pak choy, steamed, to serve
  • Lime wedges, to serve
  • Fresh coriander leaves, to serve
Instructions:
  • 1. Finely chop half of the onions and thinly slice the remaining onions. Set aside. 2. In a bowl, combine mince, breadcrumbs, egg, and finely chopped onion. Season generously and mix thoroughly. 3. Roll 2 level teaspoons of the mince mixture into balls.
  • In a large, deep frying pan over medium-high heat, heat half of the oil. Cook meatballs in batches, turning occasionally, until browned all over, about 4 to 5 minutes. Drain on paper towel.
  • In the same pan over medium heat, warm the remaining oil. Add capsicum, garlic, and sliced onion. Sauté for 2 to 3 minutes until the capsicum softens. Stir in peanut butter, coconut milk, chilli sauce, kecap manis, fish sauce, lime juice, and 1/3 cup of water. Continue stirring for 2 to 3 minutes until everything is heated through.
  • Add the meatballs back to the pan and let them simmer gently. Stir occasionally and cook for 3 to 4 minutes until the meatballs are fully cooked.
  • Cook noodles according to package instructions, ensuring they are well-drained. Serve the noodles alongside the meatballs, steamed pak choy, and lime wedges. Garnish with fresh coriander before serving.
