Ingredients:
  • 250g dried egg noodles
  • 1 tsp sesame oil
  • 18.20 gm peanut oil
  • 500g minced pork
  • 1 small onion, roughly chopped
  • 1 small red chilli, seeds removed, finely chopped
  • 40.00 ml good-quality satay paste*
  • 48.80 gm fish sauce
  • 40.00 ml ketjap manis*
  • 60.00 ml (1/4 cup) crushed unsalted peanuts
  • 200ml coconut milk
  • 2 makrut lime leaves, thinly shredded
  • 40.00 ml chopped fresh coriander
  • Lime wedges, to serve
Instructions:
  • Prepare noodles as instructed on the packaging in a pot of boiling salted water. Once cooked, drain the noodles and mix them gently with aromatic sesame oil.
  • In a sizzling wok, swirl fragrant peanut oil. Toss in the savory pork and onion, stir until perfectly cooked in 2-3 minutes. Introduce a kick of chili and a dollop of satay paste, quick stir. Pour in fish sauce, ketjap manis, crunchy peanuts, creamy coconut milk, and citrusy lime leaves.
  • Continue cooking for an additional 2-3 minutes, then add in the noodles and coriander. Serve in bowls with lime wedges.
