Satay pork salad bowl

Whip up a quick and delicious satay pork salad bowl for the family in no time with easy shortcuts and tasty ingredients!
Ingredients:
  • 250g rice vermicelli noodles
  • 4 (150g each) pork loin medallions
  • 225ml Satay Sauce
  • 3.00 gm sesame seeds
  • 20.00 ml chopped unsalted peanuts, plus extra to serve
  • 27.30 gm peanut oil
  • 1 small red onion
  • 1 Lebanese cucumber, halved, diagonally sliced
  • 1 carrot, cut into long thin strips (see notes)
  • 125g cherry tomatoes, halved
  • 125.00 ml fresh mint leaves, torn
  • Lime halves, to serve
Instructions:
  • Cook noodles according to package instructions and drain well.
  • Place the pork in a glass or ceramic dish, then add 1/3 cup satay sauce and rub to coat. Sprinkle sesame seeds and peanuts on one side of each pork steak. Heat 1 tablespoon oil in a large frying pan over medium heat. Cook the pork with the peanut mixture-side down for 4 minutes, then flip and cook for another 4 minutes until browned and cooked through. Transfer to a plate, cover loosely with foil, and let it stand for 5 minutes before slicing.
  • Finely chop half of the onion, then cook it with garlic in the remaining oil until softened. Stir in the rest of the satay sauce and water, then simmer until slightly thickened. Remove from heat.
  • Slice the remaining onion into thin pieces.
  • Assemble noodles, onion, cucumber, carrot, tomato, mint, and pork into individual bowls. Drizzle satay sauce over each bowl. Top with extra peanuts and serve with lime halves on the side.
