Rice noodle salad with satay pork patties

Creamy satay pork patties with rice noodle salad drizzled in satay sauce.
Ingredients:
  • 250.00 ml coriander leaves
  • 500g 3 Star Pork Mince
  • 500g jar satay sauce
  • 125g vermicelli rice noodles
  • 200g snow peas, thinly sliced
  • 18.20 gm peanut oil
  • 8 lettuce leaves
  • 1 carrot, peeled, cut into matchsticks
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 44.00 gm sweet chilli sauce
Instructions:
  • Finely chop half of the fresh coriander. Mix it with the minced meat and 1/4 cup (60ml) of the flavorful satay sauce in a large bowl. Season the mixture to taste. Line a baking tray with parchment paper. Divide the mixture into 16 equal portions and shape them into ovals. Chill in the fridge for 15 minutes to firm up before cooking.
  • Place the noodles in a large heatproof bowl and cover them with boiling water. Let them sit for 5 minutes until they soften. In a separate heatproof bowl, place the snow peas and cover them with boiling water. Allow them to sit for 2 minutes until tender crisp. Once done, refresh both the noodles and snow peas under cold water, then drain well.
  • In a large non-stick frying pan over medium-high heat, heat half of the oil. Cook half of the patties, turning occasionally, until golden brown and cooked through, about 5 minutes. Transfer to a plate and repeat with the remaining oil and patties.
  • Pour the rest of the satay sauce into the pan and stir while cooking for 2 minutes until warmed. Place lettuce, carrot, snow peas, cucumber, patties, noodles, and the leftover coriander on plates. Finish by drizzling with sweet chilli sauce and the remaining satay sauce.
