Asian-inspired rice noodle dish with smoked trout: Quick, healthy, and irresistible!
Ingredients:
  • 400g thin rice noodles
  • 4 spring onions, thinly sliced on the diagonal
  • 1/2 telegraph cucumber, thinly sliced into long diagonal slices
  • 250.00 ml thinly sliced snow peas (halved if long), blanched
  • 250.00 ml coriander leaves
  • 125.00 ml mint leaves, torn if large
  • 44.00 gm sweet chilli sauce
  • 60ml lime juice
  • 1 tsp sesame oil
  • 5.30 gm light soy sauce
  • 2 x 180g smoked trout fillets
Instructions:
  • In a bowl, soak the rice noodles in boiling water for 5 minutes until softened. Drain and rinse under cold water. Combine with spring onion, cucumber, snow peas, coriander leaves, and torn mint leaves in a large bowl.
  • Combine sweet chilli sauce, lime juice, sesame oil, and soy sauce in a small bowl. Flake the smoked trout fillets into bite-size pieces, ensuring no bones remain. Add to the salad, pour the dressing over, and gently toss to combine.
