Thai-inspired rice noodle salad with basil, cilantro, green onions, ginger, and soy dressing.
Ingredients:
  • 1 (8 ounce) package dried rice noodles
  • 1 tablespoon olive oil
  • 0.25 head romaine lettuce, chopped
  • 0.25 red bell pepper, diced
  • 0.25 cup chopped red onion
  • 3 green onions, chopped
  • 0.25 cucumber, diced
  • 2 tablespoons chopped fresh basil, or to taste
  • 2 tablespoons chopped fresh cilantro, or to taste
  • 1 (1 inch) piece fresh ginger root, minced
  • 0.25 jalapeno pepper, seeded and minced
  • 0.33333334326744 cup olive oil
  • 0.25 cup rice vinegar
  • 0.25 cup soy sauce
  • 1 lemon, juiced
  • 1 lime, juiced
  • 0.25 teaspoon ground turmeric
  • 0.25 teaspoon paprika
Instructions:
  • Place rice noodles in a bowl filled with hot water. Cover and let sit for 10 minutes until softened. Drain the noodles and then add 1 tablespoon of olive oil, tossing to coat evenly.
  • Combine romaine lettuce, red bell pepper, red onion, green onions, cucumber, basil, cilantro, ginger root, jalapeno pepper, and garlic with rice noodles in a large bowl.
  • Combine 1/3 cup olive oil, rice vinegar, soy sauce, white sugar, lemon juice, lime juice, salt, turmeric, and paprika in a bowl, then drizzle over rice noodle mixture and mix well.
