Coconut and lime rice noodle salad

Spicy noodle salad: vibrant side dish for Asian party.
Ingredients:
  • 200g packet rice-stick (pad Thai) noodles
  • 425g can baby corn, drained, halved lengthways
  • 1 large red capsicum, thinly sliced
  • 1 Lebanese cucumber, cut into ribbons
  • 100g baby Asian salad greens
  • 125g radish
  • 187.50 ml fresh Thai basil leaves
  • 125.00 ml roasted unsalted peanuts, chopped
  • 270ml can light coconut milk
  • 48.80 gm fish sauce
  • 65.63 gm lime juice
  • 2 long green chillies, deseeded, thinly sliced
Instructions:
  • Place noodles in a large heatproof bowl and cover with boiling water. Let stand for 5 to 7 minutes until softened. Drain and rinse under cold water. Drain again.
  • Mix together noodles, sweet corn, bell pepper, cucumber, salad greens, radish, fresh basil, and peanuts in a large bowl.
  • Combine coconut milk, fish sauce, lime juice, and chili in a sealed jar. Shake vigorously. Drizzle over noodles and mix. Serve and enjoy.
