Turkey and rice noodle salad

Delicious and nutritious meal for any time of day.
Ingredients:
  • 125g vermicelli noodles
  • 1000.00 ml cooked turkey, shredded
  • 1 bunch mint, leaves picked
  • 1 bunch coriander, leaves picked
  • 4 spring onions, shredded
  • 1 long green chilli, chopped
  • 252.50 gm coconut milk
  • 65.63 gm fresh lime juice
  • 16.00 gm brown sugar
Instructions:
  • In a large heatproof bowl, add noodles and cover with boiling water, soaking according to package directions. Drain the noodles and transfer to a large salad bowl. Toss with turkey, mint, coriander, onion, and chili.
  • For the Coconut Dressing: Mix together creamy coconut milk, tangy lemon juice, and rich brown sugar. Drizzle the dressing over the salad and gently mix to coat evenly.
