Ingredients:
  • 200g cellophane noodles (see Notes)
  • 200g roast turkey, chopped
  • 1 Lebanese cucumber, deseeded, sliced
  • 125.00 ml coriander leaves
  • 82.50 ml mint leaves, chopped
  • 4 green onions, chopped
  • 56.88 gm peanut oil
  • 68.75 gm sweet chilli sauce
  • 42.00 gm lemon juice
  • 24.40 gm fish sauce
Instructions:
  • Place the noodles in a large bowl and pour boiling water over them. Allow to sit for 15 minutes.
  • After draining the noodles thoroughly, combine them with turkey, cucumber, coriander, mint, and onions in a bowl.
  • Prepare the dressing by whisking all ingredients together with salt and pepper until fully combined. Drizzle the dressing over the salad, gently toss, and enjoy.
