Delicious turkey and egg noodle casserole: layers of seasoned turkey, tomato sauce, and mozzarella for a comforting meal.
Ingredients:
  • 0.5 cup milk
  • cooking spray
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 3 cups wide egg noodles
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon Italian seasoning
  • 4 ounces cream cheese
  • 1 tablespoon minced fresh parsley
  • 1 clove garlic, minced
  • 1.25 cups shredded part-skim mozzarella cheese
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly grease an 8-inch square baking dish with cooking spray.
  • In a large nonstick skillet over medium-high heat, brown the turkey and onion until the turkey is crumbly and browned, and the onion is soft, approximately 10 minutes. Drain any excess fat.
  • Boil a generous amount of salted water. Add egg noodles and cook until al dente, stirring occasionally, around 5 minutes. Drain and return to the pot.
  • As the water heats up for the noodles, mix tomato sauce and Italian seasoning into the turkey. Bring to a gentle boil over medium heat, then lower the heat, cover, and simmer for 10 minutes.
  • In a small saucepan over medium heat, blend milk, cream cheese, parsley, and garlic until cream cheese melts, approximately 5 minutes. Mix with egg noodles and transfer to the baking dish.
  • Spread the turkey mixture evenly over the noodles and generously cover with a blanket of melty mozzarella cheese.
  • Bake in the heated oven until casserole is hot and cheese is melted, about 15 to 30 minutes.
