Quick and flavorful chili with canned beans and turkey, ready in 15 minutes. Perfect for cozy nights or game day gatherings.
Ingredients:
  • 3 tablespoons extra virgin olive oil
  • 1 medium onion, chopped (about 1 cup)
  • 1 carrot, chopped (about 1/2 cup)
  • 2 to 3 red bell peppers, chopped (about 2 cups)
  • Salt
  • 2 cloves garlic, minced (about 2 teaspoons)
  • 2 tablespoons chili powder (or more to taste)
  • 1 teaspoon ground cumin
  • 1 pound ground turkey (I use ground turkey thighs for more flavor)
  • 3 cups chicken stock
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • 1 tablespoon cider or white vinegar
  • 2 (15-ounce) cans black beans, drained
  • Freshly ground black pepper
Instructions:
  • In a large pot, heat oil over medium heat. Add chopped onions, carrots, and bell peppers. Sprinkle with salt and cook until softened, about 6 to 8 minutes.
  • Incorporate the minced garlic, chili powder, and cumin into the mixture and sauté for an additional minute.
  • Add the ground turkey and use a wooden spoon to break it up, increasing the heat to medium-high. Stir and cook until the turkey is no longer pink, approximately 5 minutes.
  • Pour in the chicken stock, oregano, bay leaf, vinegar, and tomato paste into the pan, then use a spatula or wooden spoon to scrape up any browned bits.
  • Simmer the chili by adding the black beans. Bring it to a boil, then reduce to a gentle simmer. Cover and cook for 30 minutes. Uncover and simmer for another 30 minutes until the liquid thickens.
